Alchimie & Gourmandise is a blog written by Francoise Briet, a French nutrition scientist, entrepreneur and foodie based in Toronto who shares her passion for all things food-related.
She is the owner and head cook at Malty & Hoppy Delicacy. Her artisan company focuses on using Ontario craft beer and brewing by-products to bring new flavors and exciting small-batch artisan jellies, jams and other delicacies to the table.
Francoise has a strong scientific background. She was involved in clinical research for more than two decades in Paris as well as here in Toronto. Her area of expertise includes the development of new foods good for your health (like pre- and probiotics), lactose intolerance, and the impact of chronic malnutrition and diseases like diabetes, cardiovascular diseases… on the overall as well as organ specific metabolism (the way your body and organ produce and use energy).
Francoise has a passion for diversity in food (fresh, colorful, and seasonal foods), where it comes from, how it tastes and how our food choices affect the rest of the world. She started this blog not only to keep track of her successful cooking experimentation but also to be able to share with people her love for good food and creative culinary alchemy as well as her passion for bringing to the table a combination of delicious flavors.
Francoise has always cooked, trained by her two grandmothers who were both exceptional cooks. Moving from Burgundy to Paris and finally to Toronto, she has also had cooking experience with friends from all around the world. She love to redefine French cooking with an international twist by adding ethnic flavors to her recipes.
As an entrepreneur and “good food for health” advocate, Francoise is currently developing a series of workshops on healthy food, nutrition and good practices in the kitchen as well as a demo + dinner series where she will put back fruits and vegetable at the centre of the plate. Her objective is to focus on fresh, colorful, and seasonal fruits and vegetables, making room for both wholesome, nourishing dishes and sweet treats. More information coming soon!

Why Alchimie et Gourmandise?
Francoise loves these two words. It is a good metaphor that defines her cooking style and her philosophy around food and gastronomy.
For many people alchemy is a ‘secret science’, but not for Francoise. She is a scientist by training and she likes to experiment in the kitchen. She is like “Ratatouille”, the hero of the Pixar’s cartoon, who has discovered the alchemy of taste and flavor when he associated together strawberry and cheese. Cooking is an adventure!
Gourmandise is one of her favorite French words. It brings a smile on her face, and a twinkle in her eyes. It brings back so much sweet memories. Not necessary sweet indulgences, Francoise love healthy and natural foods: fresh products, artisanal goodies as well as organic and local ingredients. And most of the time, a vegetarian dish can make herself the happiest person in the world.
